Every year, Macmillan Cancer Support hosts the World’s Biggest Coffee Morning to help raise money and generate support for those living with cancer. Every day, 822 people in the UK are told that they have cancer, and one in three of us will get cancer at some time in our life.
The World’s Biggest Coffee Morning, which encourages us to host our own coffee mornings on and around the official date of Friday 25th September, is intended to provide an opportunity for family and friends to join thousands of others in having fun and raising money for the charity; 99% of Macmillan’s income comes from voluntary donations.
In the hope of reaching this target, Macmillan has partnered up with Half Spoon granulated sugar to create a limited edition Cancer Support Pack.
To help you to get involved in what could be the Biggest Coffee Morning in history, Editorial Food Consultant Mitzie Wilson, former Editor of DELICIOUS magazine, has created a podcast of one her favourite and easiest recipes, Honey Shortcake Biscuits, to help your friends, family and colleagues get together, have fun and raise money for the World’s Biggest Coffee Morning.
Honey Shortcake Biscuits. Makes: 20. Preparation time: 15 mins. Cooking time: 12-15 minutes. 75g (10oz) Self-raising flour, 50g (2oz) Rice flour, 225g (8oz) Butter, 75g (3oz) Silver Spoon Half Spoon Sugar, 1tbsp (15ml) Honey. Lightly greased baking sheets. Preheat oven to 150°C/300°F/Gas mark 2.
1. In a large bowl beat the butter with a wooden spoon, add the honey and mix in, then beat in the Half Spoon sugar.
2. Sieve the flour and mix into the butter mix with the wooden spoon. Gently bring together by hand to form dough.
3. Transfer onto a lightly floured surface and roll the dough out to a 4-5mm thickness and cut into biscuits with a 55mm fluted cutter, or form into desired shapes by hand. Place onto lightly greased baking sheets.
4. Bake for 12-15mins until pale golden brown. Cool on wire racks.
5. Dust lightly with icing sugar. Store in an airtight tin.
